For Black History Month, let's explore cuisine from the African Diaspora and make Ghanaian Style Jollof Rice with Nikki Thompson Frazier, owner of Sweet Encounter Bakery & Cafe and who lived in Ghana for four months and learned first-hand how to make the dish. Jollof Rice is a traditional West African, reddish color rice typically served with saucy meat traditionally made from goat or beef.
